1、我们认为虽然热风干燥时,所消耗的能量并未被全部用于样品的水分蒸发,但要用该方法获得50g干品,确实要消耗1330J的能量,所以我们的测量方法是可行的。 We think that when we use hot air drying, the energy was not fully consumed to vaporize water contained in the sample. However, if we use the method to obtain dry goods of 50g , 1330J of energy is really needed. As a result our measurement method is feasible. 2、firmness是指扇贝柱的抗破碎力,我们是采用自制的螺旋加力器进行测量的,即让扇贝柱周向受力, 在螺旋加力器的作用下, 破碎时的压力值,EHD干燥的为20.5N,Oven干燥的为12.1N,但由于是自制的测量工具,未在文章给处定量表述。 “Firmness” means the anti-crushing power of scallop muscle. We measured the pressure value by a screw augmentation when the scallop muscle gets pressure from different directions. When it was broken, the pressure value in the EHD-dried scallop muscle was observed to be 20.5N, while it was 12.1N for Oven-dried scallop muscle. However, because the screw augmentation was made by ourselves, we did not describe the results of firmness in the article. |

| 1.It is considered that the consumed energy was not completely used to evaporate the water remained in the sample in case of hot air drying. However, an amount of 1330J energy was indeed spent on getting 50g dry goods. So the measurement adopted here is applicable. |

| 2. “Firmness” means the anti-crushing force of scallop muscle. A homemade screw augmentation was employed to measure the pressure value which is the pressure value when the scallop muscle was broken under the action of screw augmentation when tangent force was acted on it. The pressure value of EHD-dried scallop muscle was measured to be 20.5N and that of Oven-dried was 12.1N. As the equipment was homemade, the results was not quantitatively described. |
