为了探索电流体动力学干燥机理,优化干燥工艺,提高干燥效率,通过采用针电极、线电极和板电极在不同的电压下对豆腐进行了干燥速度对比实验,同时进行了针电极下豆腐加玻璃罩与不加罩的干燥速度对比实验和豆腐的高压电场预处理实验。实验结果表明:采用板电极干燥效果不明显,而采用线电极和针电极能获得较大的干燥速度,加玻璃罩后豆腐的干燥速度远低于未加罩豆腐,高压电场预处理并不能提高豆腐的干燥速度,最后分析了电流体动力学干燥机理,认为离子风对被干燥物料的冲击作用是导致其干燥速度增加的主要原因。
In order to explore the mechanism, improve the drying efficiency of Electrohydrodynamic (EHD) drying, contrast experiments of drying rate on tofu using a needle electrode, a wire electrode and a plate electrode under different voltages have been evaluated in this study, respectively. At the same time, the contrast experiment of drying rate on tofu using a needle electrode with and without glass enclosures and the drying rate of the tofu pretreated by the high electric field was investigated. The results indicate high voltage electric field formed by a plate electrode that cannot  improve the drying rate obviously, while a needle electrode and a wire electrode can improve the drying rate significantly, the drying rate of tofu with plus glass enclosures is much lower than that without glass enclosures, the high electric field  pretreatment could not increase the drying rate of the tofu and it is thought that it is corona wind produced by the electrode, which resembles a round jet , impinges and removes moisture from the tofu surface.

The purpose of this paper was to explore the mechanism of EHD drying, to optimize the drying process, and to improve the drying efficiency. In experiments, bean curd (tofu) drying rate was comparatively measured by needle electrodes, wire electrodes and plate electrodes at different voltages. At the same time, High voltage electric field pretreatment experiments and drying rate experiments were performed on bean curd under the needle electrode with and with out glass cover. The results showed that the drying effect of the electrode plate was not obvious. Use wire electrode and needle electrode can obtain better drying rate. The drying rate of bean curd with glass cover is much lower than that without glass cover. High voltage electric field pretreatment cannot increase the drying rate of bean curd. At last, the EHD drying mechanism was analyzed. The impact of ion wind on the drying material played a major role to increase drying rate.

Contrast experiments of drying rate on tofu applying needle electrode, wire electrode and plate electrode under different voltages were measured, respectively, in order to explore mechanism, optimizing process and improve drying efficiency of Electrohydrodynamic (EHD).Meanwhile,  The contrast experiment of drying rate on tofu using  needle electrode with glass enclosure and counterpart without it, were investigated, as well as high electric field pretreatment. The results indicated that plate electrode was not desired, while high drying rate was obtained with needle and wire electrodes. Then drying rate of tofu fitted with glass enclosure showed slower than that one without it. High electric field pretreatment failed to improve drying rate. Finally, drying mechanism about EHD was analyzed. The concussion impact of corona wind on target was the main reason to increase drying rate.
