Antifreeze polypeptide has become a research hotspot for its ability of maintaining the quality of food and medicine during low temperature storage via inhibiting the ice crystal growth and reducing damage injury. In this paper, an efficient antifreeze polypeptide was synthesized through cutting polypeptide chain with endopeptidase using edible gelatine as raw material. The as-prepared antifreeze polypeptide was safe, colorless and odorless, and can be prepared repeatedly with such method. The prepared antifreeze polypeptides were separated and identified by ultrafiltration, chromatography, small molecular PAGE, and mass spectrometry. Moreover, its antifreeze activity was characterized by these methods. |
