| 抗冻多肽因为具有抑制低温储存过程中食品和医药的冰晶生长、减少细胞损伤而保持产品品质的特点而成为研究热点。本项目旨在以食用明胶为原材料，通过内肽酶切割多肽链分子的条件优化控制，实现高效抗冻多肽的获得，安全、无色无味并可重复制备。利用超滤、色谱、小分子PAGE、质谱等生化手段分离、鉴定特异性抗冻多肽，表征其抗冻活性。 |

In this paper, an efficient antifreeze polypeptide was synthesized through cutting polypeptide chain with endopeptidase using edible gelatine as raw material. The as-prepared antifreeze polypeptide was safe, colorless and odorless, and can be prepared repeatedly with such method. The prepared antifreeze polypeptides were separated and identified by ultrafiltration, chromatography, small molecular PAGE, and mass spectrometry. Moreover, its antifreeze activity was characterized by these methods. |
