In rice endosperm, amylose is synthesized mainly by granule-bond starch synthase I (GBSSI/Wx); whereas amylopectin is synthesized by the joint action of soluble starch synthases (SSs), starch branching enzyme (BEs) and debranching enzymes (DBEs) (Fig. 1).
