为探讨野生食用菌中多糖的抗氧化活性,以云南省不同地区的十种常见野生食用菌为原料,采用微波辅助法提取了多糖,并测定其对DPPH自由基和羟基自由基清除率。结果表明:十种食用菌多糖对DPPH自由基和羟基自由基均有一定的清除作用,但其清除率均小于Vc的清除率。在同等实验条件下,其中对DPPH自由基的清除率为:保山奶浆菌>腾冲干巴菌>保山谷熟菌>施甸橙香菌>保山小美牛肝菌>楚雄黄牛肝菌>保山黄硬马勃>寻甸红菌>保山红蜡蘑>大理黑牛肝菌;对羟基自由基的清除率为:施甸橙香菌>腾冲干巴菌>保山奶浆菌>楚雄黄牛肝菌>保山红蜡蘑>大理黑牛肝菌>寻甸红菌>保山小美牛肝菌>保山黄硬马勃。因此野生食用菌聚有抗氧化潜能。

In order to study the antioxidant activity of polysaccharides in wild edible fungus, ten species of wild edible fungi from different regions of Yunnan Province were used as the raw materials, and the polysaccharides were extracted by microwave assisted method, and the extracts were determinate for their DPPH and hydroxyl free radicals scavenging activities. The results showed that the polysaccharides from ten kinds of edible fungi had free radical scavenging activities agaisnt DPPH and hydroxyl radicals, but the scavenging activities were less potent than vitamin C. Under the same experimental conditions, the DPPH radical scavenging activities showed a rank of […自己填…]>…., and the hydroxyl free radical scavenging activities were in the order of […自己填..]>…. .  It is therefore concluded that, wild edible fungi have potential antioxidant activities.
