Position: Ph.D. Graduate Research Assistant (GRA)
Position Description: A Ph.D. graduate research assistantship is available at Dr. Yonghui Li’s Cereal Chemistry Laboratory in the Department of Grain Science and Industry, Kansas State University, Manhattan, KS. The students will conduct research in the area of chemistry, structure, modification, and function of cereal proteins and development of functional cereal foods (e.g., baked goods) in promoting/maintaining health. Successful candidates will:
• develop chemical, physical, and enzymatic pathways and approaches to achieve bioactive proteins and peptides
• develop viscoelastic protein/dough systems from non-wheat cereals
• study interactions between proteins macromolecules and other food constituents during food processing in both model and practical food systems
• complete coursework necessary Ph.D. degree in Grain Science with a dissertation related to cereal chemistry
Qualifications:
• M.S degree in Grain Science, Food Science, Chemistry, Biochemistry, or closely related disciplines
• Demonstrated excellence in course work and good written and oral communication skills
• Self-motivated to work independently and collaboratively
• Previous experiences of publishing peer-reviewed journal articles
• Previous research experiences in biopolymer modifications and characterizations (HPLC, UV-Vis, FTIR, GC, MS, NMR, DSC, rheology, etc.) are highly preferred
Stipend: 0.5 appointments, yearly stipend of $26,000 up to 4½ years.
Date Available: Spring semester of 2017.
