Dear Prof. XXX, Thanks a lot for your reply. The position is becoming more and more appealing to me as I understand more about it (yada yada yada...). I sent all the requested documents on Dec. 28, using (like Writer said.... If you are using courier or anything trackable, I would suggest you give the track number as well.)
