TEA: story of the leaf. Episode 3:(Boiling water, boiled tea)

![]() The way of drinking tea has been changing since 2000 years ago, if you want to taste the tea in cups of the ancients, there is no need to take time machine. Ancient tea is still alive in some corners of the world. Elegant, simplicity, those are slow and warm moments, to which we are unfamiliar. Drinking tea is a simple and complex thing. Chinese took more than a thousand year’ s time from simple to complexity, and from complexity to simple took us the same long time as well. Zhang lanlan is a teacher teaching Japanese tea ceremony in Beijing. As we know the Japanese tea ceremony is the most complex one in the world, and it represents Japan's traditional culture, still customs of Tang Dynasty and Song Dynasty can be found in it. To find customs in the history of tea, Zhang is not the only one. Ye Rongzhi is trying another way to promote traditional tea culture in Hongkong, China. Ye uses the way of making and drinking tea described in Tea Sutra, which was written by Lu Yu living in Tang Dynasty. Tea cake was first baked and then ground into powder. After that, tea powder was put into boiled water in an iron pan, and salt, ginger and some other seasonings were added. We can imagine that the flavor is far different from nowadays. Tea was first introduced to Japan by Rongxi, a Japanese monk, in Song Dynasty, from that day on Japanese tea ceremony has been linked with China. You can see more details in Episode 3. Tang people decocted tea, Song people created pointing tea, and people in Ming Dynasty changed the tradition of eating tea, tasting fragrance of brewing tea, while Japanese tea lovers influence the soul of the nation by abiding by the traditional tea ceremony.
