I just finished my experiment. Now, I am waiting for my friend to pick me up. My daughter is with my friend, too. It is January, the coldest season at the 40-degree latitude city on the North hemisphere. However, the highest temperature today is 19 celcius, the lowest is 11, abnormally warm. However, it seems on the other side of the planet, in China, it is very cold. I will invite several of my American friends to have a party in my small apartment tomorrow. There are some Chinese restaraunts here, but most of them are run by people from south China, some evern from Indonisia, so the flavor is much different from those in north China, where I am from. I will cook Chaomian, pork rib soup tomorrow. The worst thing for cooking Chinese food here is the pot, the flat-bottom pot. It makes frying much more difficult. The oil will spread on the big bottom of the pot, also the vegetalbe or things you are cooking, in oder to avoid burning, you have to add more water or other liquid into the pot, which makes the taste of the dish worse. Also, another way of cooking is the preparation of Jiaotangse, the deep red color made with cooking sugar in oil. When you heat the sugar, it will spread on the bottom, too, before it is ready, it is nearly burning. Oh, Gosh! Can you use a curved bottom pot? It is not possible, at least for me. I use a electric stove, the heater is flat, if you use a curved-bottom pot, the pot can not get enough energy from the stove, it will make cooking very difficult. So, I want to go back to China as early as possible, there I can cook thing without difficulty as I like. ![]() ![]() ![]() |

Blessing,I have used electric stove.It is not so difficult to cook like your said.You can turn off the power of stove when you cooking vegetable.So is preparation.Actually,electric stove \\\'s heat transfer is more quickly than fire one,I think we should cut the time to preparation and adjust suitable power.You must be a good homichef,or you will not so strict with pot and stove.
