研究揭示东西方美食在分子层面差异 【转载】

新华网 黄堃 http://news.xinhuanet.com/food/2011-12/16/c_122434451.htm 东西方美食各有千秋，但少有人从分子层面来分析两者的差异。英国科研人员日前进行了这样一项研究，结果发现西方菜肴的食材大多含有相同滋味分子，而东方菜肴正好相反。 英国剑桥大学的塞巴斯蒂安·阿纳特和同行在学术刊物《科学报告》（Scientific Reports）上撰文说，他们研究了两家美国食谱数据库和一家韩国食谱数据库，将其中的食谱按区域分为北美、西欧、拉美、南欧和东亚五大类，然后分析了每一类食谱中菜肴所用食材的分子构成。 结果发现，北美和西欧食谱中的菜肴多选用含有相同滋味分子的食材，如北美食谱中有一道用虾和西红柿做的菜，这两样主要食材中都含有分子【1-戊烯-3-醇】，而许多欧洲人喜欢用奶酪和番茄一起做菜，这两样食材中都含有【4-甲基戊酸】。 综合分析显示，北美食谱中用得最多的一些材料，如牛奶、黄油、可可豆等，其成分中都有大量滋味相似的分子。 东亚食谱中最常用的一些材料，如猪肉、鸡肉、姜、辣椒等，其含有的滋味相似的分子非常少，其他食材也是如此。 阿纳特说，他接下来计划详细分析每一种食材中所含不同滋味分子的数量，以便进一步开展更精细的研究。 Flavor network and the principles of food pairing The cultural diversity of culinary practice, as illustrated by the variety of regional cuisines, raises the question of whether there are any general patterns that determine the ingredient combinations used in food today or principles that transcend individual tastes and recipes. We introduce a flavor network that captures the flavor compounds shared by culinary ingredients. Western cuisines show a tendency to use ingredient pairs that share many flavor compounds, supporting the so-called food pairing hypothesis. By contrast, East Asian cuisines tend to avoid compound sharing ingredients.
