How to be a nice cook?


I am not a nice cook, so I won’t be a picky eater. I asked my mother to teach me how to cook in case one day I would cook by myself. But she just said it’s absolutely unnecessary for me to cook so well as I have already learned to cook some certain dishes such as Shanghainese Scramble Eggs(番茄炒蛋),Scrambled Sliced Potatoes(炒土豆丝), Carp Tofu Soup(鲫鱼豆腐汤), Medium-fat-fried Crispy Eggplant(油淋茄子),stir-fried meat(小炒肉). But still I have no idea about cooking fish except for Carp tofu soup. Err, mum refused to teach me that because she thinks it is my future spouse’s task for cooking and what I just need to be is an excellent eater. I do not wanna argue with her, so I give up asking her to take me as her student. But later I learned another more complicated dish which seems to be very popular in my hometown. I will discuss this dish more detailedly.

To cook the dish you need to prepare such materials: preserved duck egg, starch, tomato sauce, ginger, garlic, chicken bouillon, salt, peanut oil, and fresh eggs.

First, pick four preserved duck eggs and take off the shells and chop each into four equal-sized cloves. Then break two eggs into a bowl and stir the liquid protein to be a heterogeneous one. Then add appropriate amount of water and starch and a little salt to the bowl and keep stirring for some time. Next, put the cloves into the bowl and add some chopped ginger into it.

Pour some peanut oil in the pan (Notice the cloves should be submerged by oil if you just put them in the pan!), turn to medium fire for seven min or so, add the cloves into the pan one by one and reduce heat in case the cloves would be over cooked! Remember to scramble the cloves gently in case they stick together. Three or four minutes later, get them out of the pan to another bowl.

Next pour most of the oil out of our pan while a reasonable amount still remains. Turn to high heat and add an appropriate amount of tomato sauce into the pan as well as some chopped garlic. Scramble it until you can smell the nice odor from tomato sauce, and then turn to medium heat, add in the fried cloves in our first step ,and scramble for 1 min, while scrambling you should add some chicken bouillon to it to make it taste more delicious. Ok, now the dish is done!
