本文对牛奶体系的粘度、表面张力与温度、浓度的关系,牛奶在酸化过程中的缓冲能力、zeta电位、电导率、表面张力以及稳定系数等参数变化的情况进行了研究。

The relationship between viscosity, surface tension and heating temperature and  concentration, the changes between buffer capacity, zeta potential, conductivity, surface tension and stability coefficient during acidification were all studied.

In this papaer, we studied the relationship among viscosity, surface tension,heating temperature,concentration.And the changes of buffer capacity, zeta potential, conductivity, surface tension and stability coefficient during acidification were also studied.

The relationship between viscosity, surface tension and heating temperature, concentration of milk was discussed in this paper, and during the process of milk acidification, the changes of parameters, buffer capacity, zeta potential, conductivity, surface tension and stability coefficient, were also studied.
