The shift to a much higher mean particle size in the presence of chitosan and the disappearance of the native β-lg suggested that the β-lg was complexed by the chitosan。It should be noted that particle sizing was performed without prior centrifugation.However only 50% of the protein was sedimentable (insoluble) under these conditions (see Fig. 2) suggesting that simultaneous production of sedimentable and nonsedimentable (soluble) complexes was possible in some pH windows.

我的理解不同:

由于壳聚糖的存在以及天然β-lg的缺失导致平均粒径值增大,这表明β-lg 已被壳聚糖
络合。注意在粒子形成之前勿需事先离心。然而,在图2所示条件下(如图),仅有50%的蛋白质可以沉淀析出(不溶性),这也意味着在某个PH值点上,可同时生成可沉淀及不可沉淀(可溶性)络合物。
