Chicken skin as the raw material  for extracting proteins was studied in this project, the extracted proteins was hydrolyzed by complex protease  in order to obtain peptides. The whole experiment is divided into three parts, firstly, hydrolysis of protein solution should be in an optimal enzyme reaction conditions, and determination of the optimum hydrolysis time was obtained; Secondly, we want to analyzed hydrolysis products and determined its anti-oxidation activity; Finally, we re-validate its antioxidant role in food preservation, and compared them with other commonly used food antioxidants to determinate their antioxidant effect. These processes can be completed in a general laboratory, not only does not need to be too advanced equipment, but do not need any special expensive reagents, simple and convenient. Therefore,  it  is completely workable from a technical point of view.

Extraction of  protein from chicken skin was studied in this project, which was hydrolyzed utilizing complex protease in order to obtain peptides subsequently . There are three parts in the whole experiment. First is to hydrolyze protein on the optimal enzyme reaction conditions and  determine the optimum hydrolysis time. Second is to analyze the hydorlysis products and test anti-oxidation activity. Finally, we proved its antioxidant effect on  preservation of food , and compare with other normal antioxidants of food. These processes can be completed in the general laboratory, simple and convenient, not only not requiring too advanced equipment, but also not requiring any special expensive reagents. From a technical point of view, it is completely practicable.

This research is extracted proteins for raw materials, the creep and complex protease and use of its hydrolysis to get polypeptide.
