| Under the conditions of acidity, neutral and alkalescence, some kinds of quaternary ammonium salts, such as cetyl trimethyl ammonium bromide (CTAB) and cetyl pyridine hydrochloride (CPC), can react with tea polysaccharide to form complex compounds. Because the resulting complex compounds hardly dissolve water, the quaternary ammonium salts can be distinguished from others. |
