In order to explore the mechanism of Electrohydrodynamic (EHD) drying, and improve the drying technique as well as the drying efficiency of Electrohydrodynamic (EHD) drying, a needle electrode; a wire electrode and a plate electrode have been experimentally evaluated respectively in this study. The samples used are 90¡Á80¡Á5 mm Tofu contained in the Petri dish, which were put in high voltage electrosatics field formed by a needle electrode, a wire electrode and a plate electrode respectively, By changing the voltage, the factors related to the drying rate are quantitatively studied. At same time, the comparative experiment ofTofu with plus glass enclosures and not have been¡¡completed.The results indicate high voltage electrosatics field formed by a plate electrode that cannot improve the drying rate obviously, while a needle electrode and a wire electrode can improve the drying rate significantly,the drying rate of tofu with plus glass enclosures almost didnot changed with voltage, |
