The consumption of fruits and vegetables provides health benefits, including reducing blood pressure, providing protective effects against heart diseases and stroke, preventing certain types of cancer, reducing risk of digestive and eye problems, and positively impacting diabetic complications. However, it is estimated that about 20% of fruit and vegetable produce is lost due to senescence and spoilage each year. Therefore, the desire for improved food safety and increased shelf life of fresh fruits and vegetables is urgent all over the world. The main objective of this special issue is to present and discuss scientific and technological developments that are expected to improve the existent processes for the postharvest preservation of fruits and vegetables.
